Twenty years of Congress celebrated with an eye to the Future
Ferran Adrià, Moreno Cedroni, Nicolai Nørregaard, Norbert Niederkofler, Carlo Cracco, Antonino Cannavacciuolo, Davide Oldani, Giancarlo Perbellini, Massimiliano Alajmo, Massimo Bottura, Aitor Arregui, Jeremy Chan, Andreas Caminada: these are just some of the great chefs who will alternate as speakers and protagonists in the various sessions of Identità Milano 2025, scheduled from 22 to 24 February in the futuristic spaces of the Allianz MiCo-North Wing.
This edition marks the twentieth anniversary of this very prestigious Congress; and yet the curators Paolo Marchi and Claudio Ceroni, rather than celebrating the memories of the past on the occasion of this two-decade anniversary, once again prefer to look forward and define the “Future Identities” of the world of fine dining.
For over ten years, their prospective and evolutionary vision has been fully shared by Berto’s that, also in this edition, is the Main Sponsor of the symposium.
Over these three intense days in the various rooms of Identità Milano exhibition, visitors will have the opportunity to listen to and see at work some of the most renowned Italian and foreign chefs supported by the kitchens, ovens and various advanced solutions for preservation, cooking and preparation of food developed by Berto’s.
Berto’s will also bring the “jewels” of its collections to its large and welcoming Lounge stand: from top-of-the-range commercial kitchens, with the possibility of tailored customization, fine finishes and latest-generation technologies, to the numerous innovations previewed last January at Sigep Rimini, such as the compact Combi Ovens, the new touch screen blast chillers with steam generator and the new range of Vacuum Solutions (vacuum chamber machines).
