The prestigious Marriott International Inc. chain had grand plans for its 5-star Bella Sky Hotel in Copenhagen: the ownership wanted to modernise the building and completely reformulate the logistics and functions of its kitchen, in order to also offer more refined East Asian cuisine alongside international dishes.
They wanted to create a kitchen that combined both induction cooktops and the most advanced technology with technical cooking solutions suitable for the preparation of typical Cantonese dim sum dishes and the grills required for the ancient cooking systems for Japanese robatayaki cuisine.
